How To Make Roasted Cauliflower and Carrots

Air Fryer Method:

This is the method that I use and prefer as cooking in the air fryer makes things fuss-free, efficient, and quick.

Step 1: Prep the Veggies

Start by washing and chopping your cauliflower into bite-sized florets and slicing the carrots into even sticks. The more evenly cut they are, the better they’ll cook!

Step 2: Season the Vegetables

Toss the cauliflower and carrots in a large bowl with olive oil, garlic powder, oregano, red chili flakes, salt, and pepper. Mix it all up until every piece is perfectly coated with those savory spices.

Step 3: Air Fry the Veggies

Preheat your air fryer to 375°F (190°C) for 5 minutes.

Add the cauliflower and carrots to the air fryer basket in a single layer (you might need to do this in batches depending on the size of your air fryer).

Air fry for 15-18 minutes, shaking the basket halfway through to ensure even roasting. You’ll know it’s done when they’re golden brown and crispy on the edges!

Step 4: Serve & Enjoy

Once the roasted cauliflower and carrots have achieved crispy perfection, pull them out, garnish with chopped coriander if you like, and serve it as a side or a snack.

Oven Method:

If you don’t have an air fryer, no problem! Preheat your oven to 400°F (200°C).

Spread the seasoned cauliflower and carrots in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until they’re crispy and golden. Easy and tasty!

Tips & Variations for Roasting Carrots and Cauliflower

Spice it up: Love heat? Sprinkle in some paprika or cayenne pepper to spice things up!

Give it a protein punch: Make it a full meal by adding some sautéed tofu, tempeh, or chickpeas for extra protein.

Add more veggies: Feel free to toss in other veggies like sweet potatoes, brussels sprouts, or bell peppers for even more flavor and variety!

How to Store

In the Fridge: Leftovers can be stored in an airtight container in the fridge for up to 4 days.

In the Freezer: If you’ve got extra, you can freeze them for up to 2 months. Just be aware that the texture may change slightly after freezing and thawing.

Meal Prep Tip: You can easily store them in the fridge for 4 days by pre-roasting carrots and cauliflower ahead of time. After that, you can quickly reheat them in the air fryer for 3-5 minutes at 375°F (190°C) to restore that crispy texture.

Reheat: Gently reheat in the air fryer or on the stovetop. You can add a bit of olive oil to refresh them if needed.
