Air Fryer Method:
Start by washing and chopping your cauliflower into bite-sized florets and slicing the carrots into even sticks. The more evenly cut they are, the better they’ll cook!
Toss the cauliflower and carrots in a large bowl with olive oil, garlic powder, oregano, red chili flakes, salt, and pepper. Mix it all up until every piece is perfectly coated with those savory spices.
Preheat your air fryer to 375°F (190°C) for 5 minutes.
Add the cauliflower and carrots to the air fryer basket in a single layer (you might need to do this in batches depending on the size of your air fryer).
Air fry for 15-18 minutes, shaking the basket halfway through to ensure even roasting. You’ll know it’s done when they’re golden brown and crispy on the edges!
Once the veggies are roasted to crispy perfection, pull them out and garnish with chopped coriander if you like and serve it as a side or a snack.
Oven Method:
If you don’t have an air fryer, no problem! Preheat your oven to 400°F (200°C).
Spread the seasoned cauliflower and carrots in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until they’re crispy and golden. Easy and tasty!
