For Golden Girl Salad
Tomatoes: Tomatoes are the soul of this salad. You can choose any kind of tomatoes you like, but the cherry, and sungold tomatoes are the ideal ones to use.
Sweet Corn Kernels: You can go for fresh, frozen, or canned ones. If using fresh corn, cook it beforehand.
Onions: Normally scallions are used because of their mild flavor, but I like to add red onions because they add a little bit of heat to the salad.
Green Bell Pepper: Use the yellow bell pepper to add a splash of vibrant colors. The red and green ones are also perfectly fine.
Carrots: If convenient, try to add multicolored carrots to make the salad more appealing.
Cabbage: Cabbage adds a lot of substance, and fiber to the salad.
For Sweet Corn Vinaigrette
Sweet Corn Kernels: Like before, use fresh, canned, or frozen corn.
Garlic: Use garlic cloves for the most flavor.
Vinegar: Vinegar provides savoriness and balances out the flavor of the dish. Use the white vinegar for more acidic content.
Lime Juice: Like vinegar, it brightens up the flavor of the salad.

How to Make Golden Girl Salad with Sweet Corn Vinaigrette
For the salad:
1. Run water on frozen sweet corn, and microwave them for a minute, then let them aside for further use.
2. In a large bowl, toss in the cabbage, carrots, corn, tomatoes, bell peppers, and onions, and mix them well.
For the vinaigrette:
3. In a blender, add leftover corn, garlic, oil, salt, pepper, lime juice, and vinegar. Blend them into a fine smooth paste.

Tips & Variations
- You can add turmeric powder in the vinaigrette for its health benefits, and color.
- To make the flavor milder, use scallions instead of red onions.

Or you can with any chips you like.

How to Store
