I’ve become obsessed with this fried Maggi recipe.

India is a place where there are literally a thousand ways you can make Maggi, but many people overthink the process and come up with recipes that are downright non-edible! (yeah, I said it)

You don’t have to make that your fate.

What is Fried Maggi?

India is a vast country, and every region has its own kind of twist on how they make instant noodles.

You’ll find new varieties of Maggi, just by scrolling ‘Insta’ for 30 minutes, and that’s how I found out about this recipe.

Now, hold your horses!

Fried Maggi doesn’t mean that you’re going to dip the noodles in hot burning oil and get a crispy golden brown cake out (although that doesn’t sound so bad).

You just have to mix cooked noodles in an aromatic masala of onion, garlic, soy sauce, and tomato ketchup in a pan.

Ingredients in This Fried Maggi Recipe

Instant Maggi Noodles: They are available at any convenience store. You can also try this recipe with other instant noodles.

Onions: Use red onions as they have a more intense flavor and aroma.

Garlic: Garlic is necessary for enhancing the overall flavors of the dish. Plus, they are also rich in vitamins B and C, and manganese.

Oregano: They are known for the herby aromaticness they add to the dish. They are a great source of vitamin K, and minerals such as calcium, iron, and potassium.

Chilli Flakes: They go hand-in-hand with oregano, and add a hot spicy flavor to the Maggi.

Tomato Ketchup: It is for the tanginess and sweetness in the mix and balances the flavors from other ingredients very well.

How to Make Fried Maggi

Boil the Noodles:

1. Take a pot, switch on the flame to high, and boil water in it. Then add the Maggi noodles, and save its masala for later.

2. Once they are cooked till Al dente, strain the water, run cold water on the noodles, and drizzle some oil so they do not stick together. Keep them aside for later.

Make the Masala Mixture:

3. Heat oil in a skillet, add onion and garlic, and saute them on high flame till they get translucent.

4. Add oregano and chili flakes and saute them for 30 seconds on high flame.

5. Lower the flame, pour tomato ketchup on the mixture, and give it a nice mix.

6. Now add the Maggi masala and give it a proper mix. Add a splash of water to avoid burning the masala.

Combine:

7. Take the cooked noodles, and add them to the masala mixture. Mix well.

8. Your fried Maggi is ready to be served.

Tips & Variations

You can substitute adding chili flakes and ketchup for red chili sauce. I tried it and it came out the same way (though less spicy).

If you want to make it a veggie-loaded meal, you can add carrots, french beans, and capsicum too.

Serving options

Serve this dish hot on a plate with a soft drink on the side. You can also serve masala lemonade in the drinks for a refreshing experience.

Top it with shredded cheese, sprinkle some crushed crisps to make a fuller meal, and add some munch.

How to Store

This Maggi recipe is best savored when it’s fresh, and I do not recommend storing it as the noodles might get soggy.

What you can do though is make the masala beforehand and store it in the fridge, then boil the noodles and combine them when you want to eat.

  • Water
  • 1 tsp Oil
