Take baby potatoes, add them to the pressure cooker, and pour some water in.
Switch on the flame to medium, and let the cooker whistle twice.
Then drain out the water and set aside the potatoes to cool down, squish the potatoes flat with their skin on.
Add red chili powder, corn flour, and salt in a bowl, and pour enough water into it for a thin batter.
Heat oil in a wok, dip the potato patties in the batter, and fry them on medium heat till they turn golden brown, then take them out.
Take a bowl, and add red chili flakes, oregano, mixed herbs, red chili powder, onion powder, salt, and mayonnaise. Mix them well. The cajun sauce is ready.
Plate the fried potatoes, and gently pour over the cajun sauce. Serve them hot and enjoy your cajun potatoes.
