Cajun Potatoes Recipe: 7 Easy Steps to Make Cajun Potatoes Barbeque Nation Style

Ingredients
  

For the potatoes:

  • 10-12 Baby Potatoes
  • Water (as required)

For the Batter:

  • 2 tbsp Corn Flour
  • 1 tbsp Refined Flour (optional)
  • ½ tsp Red Chili Powder
  • Salt (a pinch)
  • ¼ cup Water (adjust according to batter)

For the Cajun Sauce:

  • ½ cup Mayonnaise
  • ½ tsp Red Chili Flakes
  • ½ tsp Mixed Herbs
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ½ tsp Red Chili Powder
  • ¼ tsp Black Pepper Powder
  • ¼ tsp Salt
  • 3-4 tbsp Milk (adjust for consistency)

Instructions
 

  • Take baby potatoes, add them to the pressure cooker, and pour some water in.
  • Switch on the flame to medium, and let the cooker whistle twice.
  • Then drain out the water and set aside the potatoes to cool down, squish the potatoes flat with their skin on.
  • Add red chili powder, corn flour, and salt in a bowl, and pour enough water into it for a thin batter.
  • Heat oil in a wok, dip the potato patties in the batter, and fry them on medium heat till they turn golden brown, then take them out.
  • Take a bowl, and add red chili flakes, oregano, mixed herbs, red chili powder, onion powder, salt, and mayonnaise. Mix them well. The cajun sauce is ready.
  • Plate the fried potatoes, and gently pour over the cajun sauce. Serve them hot and enjoy your cajun potatoes.

Notes

  • Use onion garlic paste in place of the powders: You can add onion garlic paste instead of garlic powder and onion powder in the sauce. It has a similar taste and doesn't ruin the texture. However, only add half a teaspoon of it as they have an intense flavor.
  • You can use normal-sized potatoes as well: While baby potatoes are ideal for this dish, because of their shape and cooking time, you can also go for regular potatoes. Cut them into quadrants or not after cooking them in the cooker, and follow the same steps mentioned above.
 
How to store:
Separate the sauce: It's best to store the sauce separately as the potatoes will get soggy. You can place the sauce in an air-tight container
Storing potatoes: The fried potatoes may not remain fresh and will get soggy if stored in the fridge for more than 3 days. Do not freeze them as they will lose their texture and will spoil the whole dish.
Best to consume it fresh: Fried foods like this always taste the best when gobbled up fresh. You get a nice crispy texture and fresh taste.
