These noodles almondine is the new dish out in the town and it has already grabbed my palate’s attention.

It is similar to that of sesame brown butter udon noodles but with creamy and crunchy almonds and without any sesame.

This dish can easily become your next quick dinner on busy weeknights or an appetizer to go along with your soups and salads.

Ingredients In This Noodles Almondine Recipe

Noodles: Any kind of noodles would work in this recipe. I used chow-mein noodles because of their thin-long shape. Plus they also give an amazing mouth feel.

Butter: Butter provides a lustrous look to the noodles and makes them smooth and silky when slurping.

Almonds: As the name of the dish suggests, this noodle recipe is nothing without almonds. They add creaminess and an irresistible crunch to the meal.

Garlic & ginger: They hoist up the flavors ten-fold and their savory notes and aroma will make your taste buds dance in joy.

Salt

How To Make Noodles Almondine

In a pot, boil the noodles according to the instructions given in the package, till al dante.

In a skillet, melt butter till they are brown, and saute almonds, garlic, and ginger for 30 seconds on medium flame.

Now, add salt, and the cooked noodles, and mix them properly.

Finish the dish by sprinkling some chopped almonds on top and your almondine noodles are ready to serve.

Tips & Variations

Use almond butter instead of normal butter: For more flavor and to keep this recipe vegan, replace yellow butter with almond butter. This will not only provide depth to the flavors but also is a much healthier option than the normal butter.

Go for thicker noodles: If you want something more substantial, use thicker noodles like udon or fettuccine. They will lend more texture to the dish.

Herb it up: For a more profound flavor profile, try adding in some parsley, dill, or basil, for a herbal touch. You can also add spinach for extra protein and potassium.

Serving Options

While these noodles can be enjoyed thoroughly without any mixing and matching, their flavor profile surges with the right combinations.

Meats and protein: Serve the noodles with roasted or grilled chicken or fish. Also if you enjoy curries, butter chicken would be a fabulous choice to pair them with.

Veggies: Roasted veggies especially this stir-fry cabbage carrot recipe can infuse a great deal of freshness to the meal.

Soups: Clear soup or a manchow soup will give these noodles the right amount of spiciness and savory flavor, and they will also keep the noodles moist.

How To Store

In the fridge: These noodles can be stored in the refrigerator for up to 4 days. Just place them in an air-tight container to avoid spoilage.

In the freezer: You can also freeze them for a couple of months.

Reheating: Thaw them overnight in the fridge and then reheat the noodles in a pan. If they have become too dry, add a couple of tablespoons of broth or water.
