Air Fryer Method:

  • Preheat your air fryer to 400°F (200°C) for 5 minutes. This high temperature ensures your potatoes and broccoli get perfectly crispy and caramelized.
  • Cut the potatoes into small, uniform pieces, about 1-inch cubes for faster cooking. Similarly, cut the broccoli into florets, ensuring they're the same size.
  • Place the potatoes and broccoli in a large bowl. Drizzle with olive oil, garlic powder, oregano, red chili flakes, salt, and pepper, and toss to coat. Make sure they are evenly seasoned.
  • Add the seasoned potatoes to the air fryer basket in a single layer. Cook for 10 minutes at the same temperature, shaking the basket halfway through for even cooking.
  • After the potatoes have cooked, add the broccoli florets to the air fryer basket.
  • Shake the basket to spread them out evenly and cook for an additional 8–10 minutes, or until both the potatoes and broccoli are golden and crispy
  • Once your roasted potatoes and broccoli are done, remove them from the air fryer and serve immediately. For added flavor, sprinkle with lemon juice or a little vegan Parmesan.

Oven Method:

  • Line the baking sheet with seasoned broccoli and potatoes and cook it for 40-45 minutes till crisp and golden.
  • Check halfway through to flip the veggies so that they get evenly cooked.

Notes

  • Cut Potatoes Uniformly: Make sure the potato pieces are of equal size for even cooking.
  • Don’t Overcrowd the Pan: Whether you're using the oven or air fryer, don't overcrowd the baking sheet or basket. This allows the potatoes and broccoli to cook evenly and attain their signature crispy texture.
  • Change Up the Seasoning: Feel free to experiment by adding smoked paprika for a smoky flavor or some stir-fry sauce for a tangy twist.
 
How to store:
In the fridge: If you have any leftovers you can store them in an airtight container in the refrigerator for up to 3 days.
Reheat: To reheat, place the potatoes and broccoli back in the air fryer at 375°F (190°C) for 5 minutes or in the oven for 15 minutes to regain their crispness.
