Preheat your air fryer to 400°F (200°C) for 5 minutes. This high temperature ensures your potatoes and broccoli get perfectly crispy and caramelized.
Cut the potatoes into small, uniform pieces, about 1-inch cubes for faster cooking. Similarly, cut the broccoli into florets, ensuring they're the same size.
Place the potatoes and broccoli in a large bowl. Drizzle with olive oil, garlic powder, oregano, red chili flakes, salt, and pepper, and toss to coat. Make sure they are evenly seasoned.
Add the seasoned potatoes to the air fryer basket in a single layer. Cook for 10 minutes at the same temperature, shaking the basket halfway through for even cooking.
After the potatoes have cooked, add the broccoli florets to the air fryer basket.
Shake the basket to spread them out evenly and cook for an additional 8–10 minutes, or until both the potatoes and broccoli are golden and crispy
Once your roasted potatoes and broccoli are done, remove them from the air fryer and serve immediately. For added flavor, sprinkle with lemon juice or a little vegan Parmesan.
