  • 4 slices Bread
  • Butter
  • Prepared Filling

  • Take a large bowl, and add sliced coleslaw, capsicum, onions, julienned carrots, and sweet corn kernels. Give it a mix.
  • Then, add salt, pepper, oregano, red chili flakes, and mayonnaise. Mix them thoroughly till you get a nice coating on the veggies.
  • Now, take a slice of bread, spread the filling evenly on every corner on one side, and overlap it with another slice.
  • Switch on the flame to medium, and heat up the griddle.
  • Apply melted butter on the exposed sides of the bread, and grill it on both sides till you get a nice crispy brown layer.
  • Your veg coleslaw sandwich is ready to be served.

Notes

  • Experiment with different types of breads: The best thing about a sandwich is that you can make it using a variety of breads. Use garlic bread, sourdough bread, buns, or even a footlong.
  • Add more sauces: Add a mix of sauces such as mint, harissa, mustard, BBQ sauce, and so on to brighten up the flavors of the sandwich, and to keep things fresh.
  • Eat it raw: Instead of grilling the bread, just eat it raw for a chewy texture. This is a great alternative if you don't have time to cook the bread, though storing the sandwich like this becomes tricky.
  • Other add-ons: If you want to make the sandwich more hearty and wholesome, try adding meats, veggies like broccoli and lettuce, and shredded cheese of your liking. This will not only hoist up the flavors but make it more nutritive.
 
How to store:
Separate the elements: Store the stuffing and the bread separately in the fridge to avoid sogginess.
In the fridge: Wrap the sandwich thoroughly and then keep it in the fridge. make sure to consume it within 24 hours.
In the freezer: Avoid freezing as it will lead to degradation of the texture and the flavor of the sandwich.
