15-Minute Healthy & Crunchy Peanut Salad

This peanut salad is everything you wanted! A healthy starter, full of crazy crunch that will wake you right up from your morning slumber. A combination of veggies from fresh cucumbers to vitamin-rich bell peppers engulfed in boiled peanuts make the perfect meal or a snack to enjoy with your drinks.

Ingredients
  

For Boiling the Peanuts:

  • ½ cup Peanuts
  • Water as required
  • Salt

For the Salad:

  • 1 small Cucumber chopped
  • 1 medium Tomato chopped
  • 1 medium Onion chopped
  • ½ medium Red Bell Pepper chopped
  • ½ medium Yellow Bell Pepper chopped
  • ½ tsp Red Chili Powder
  • ½ tsp Chaat Masala Powder
  • ½ Lemon squeezed
  • Salt
  • Boiled Peanuts

Instructions
 

  • In a pot, boil some water, and add salt to it. Add the peanuts, slightly cover the pot (to let the steam escape through), and cook them for 10 minutes on high flame.
  • Seive away the water from the pot, and let the peanuts cool down at room temperature.
  • Take a bowl, and add chopped cucumber, tomato, onion, bell peppers, green chilies, red chili powder, chaat masala powder, lemon juice, and salt. Lastly, add the peanuts as well.
  • Now, cover the bowl with a lid or a plate, and toss it vigorously for 30 seconds till all the ingredients are mixed well.
  • Your peanut salad is ready to be served.

Notes

  • Add more veggies and fruits: If you think that the salad could do with more variety of fruits and vegetables, you can add carrots, pomegranate peas, green peas, mango cubes, and so on.
  • Make it street food style: The real fun of eating this peanut salad is to first make it street food style. Simply pour in some coriander mint chutney, and tamarind chutney, and give it a whirl. Just amazing!
  • Increase the salad's lifespan: The effortless way to improve the life of the salad is to drain the water released from the cucumber and tomato. Just sprinkle some salt over them, wait for them to let go of the water, and then throw it away. This method prevents the oxidation of the salad, thus making it last long.
 
How to store:
This salad is a dream for meal-prepping as it can be preserved in the fridge for up to 3 days by placing it in an air-tight container.
If you want to extend its life, you can keep the boiled peanuts separately in the refrigerator and cut the vegetables at the time of making the salad.
