10-Minute Creamy Cottage Cheese Pasta Sauce

For cooking the pasta:
- 250 gms Spaghetti
- Water
- 1 tsp Oil
- 1 tsp Salt
For the sauce:
- 2 tbsp Butter
- 3-4 cloves Garlic chopped
- 1 small Onion chopped
- ¼ cup Cottage Cheese
- 3 tbsp Mozzarella shredded
- ¼ cup Milk
- Salt
Boil water in a pot, and cook the pasta according to the instructions on the packet till al dante.
In a skillet, melt butter, and add garlic and onion. Saute them till the onions are translucent.
Now, add cottage cheese, shredded mozzarella, milk, and cooked garlic and onion in a blender and blend them into a smooth sauce.
Add the sauce back to the skillet and add salt, oregano, and red chili flakes.
Now dump the pasta into the sauce and your pasta sauce with cottage cheese is ready.
- Add-ons: Broccoli, chicken, fish, or any meat or vegetable can be added to the sauce.
- Spicier alternative: For more flavor complexity, saute chopped green chilies along with garlic and onion.
How to store:
In the fridge: You can make ahead this sauce to cut down the dinner preparations time. Store it in the fridge for a week by transferring it to an air-tight container.
In the freezer: To store the sauce for a long time, freeze it and the sauce can be preserved for 1-2 months.
Reheating: Thaw the sauce in the refrigerator for the whole night and reheat it in a skillet before adding the pasta.
