Try out this spicy and crunchy chilli cheese toast that is gonna rock your world! It is loaded with veggies on top along with the cheesy goodness of mozzarella, perfect for a grab-and-go breakfast!

Chilli cheese toast is a popular Indian street food in Mumbai brimming with spicy and savory flavors, and a boatload of melted cheese on top.

Plus, it is quite easy to make, and effortless to customize.

The onion and tomatoes add a certain tang and crunch to every bite, while the cheese makes it creamy and filling.

But it’s the seasoning of oregano, red chili flakes, and chopped green chilies that transforms this toast into a flavor-bursting delicacy that is quite addicting.

I’d often make it as a quick snack when I’m feeling quite peckish, or a simple yet delicious brekkie when I’m not in the mood to face the kitchen.

Tools You’ll Need

  • Pan: Use a flat pan, so that the bread is grilled evenly.
  • Glass Bowl: To make the chili cheese mixture.

Ingredients in This Chilli Cheese Toast Recipe

Whole Wheat Bread: Typically sourdough bread is used in making toast for its thickness and crusty texture, but you may go for white bread or whole wheat bread like I did.

Onions: Onions have a mildly sweet flavor and crunchy texture, and also have antioxidant properties.

Tomatoes: Tomatoes add juiciness and infuse a savory flavor.

Green Chilies: You don’t expect to make a chili toast without adding chilies. I used green chilies for the heat, but you also use jalapenos

Mozzarella Cheese: I like mozzarella for its melting properties and salty flavor. You can also choose cheddar.

Oregano: Oregano adds a depth of complexity with its herby and subtle bitterness.

Red Chili Flakes (optional): Double-downing on the heat factor, red chili flakes are perfect as the last spicy kick. If you don’t want to make the toast too hot, skip it.

Butter: Butter keeps the bread moist. Feel free to use unsalted versions to reduce the sodium content in the recipe.

How to Make Chilli Cheese Toast

Prepare the Mixture:

In a glass bowl, add chopped onions, tomatoes, green chilies, shredded mozzarella, oregano, red chili flakes, salt, and pepper.

Spread the Mixture on the Bread:

Take a slice of bread, apply butter, and spread the chili cheese mixture evenly. Make sure to keep most of the batter in the center as the cheese may fall from the sides after melting.

Make the Toast:

Preheat the pan for 30 seconds on medium flame, then lower it.

Place the bread in the pan, and toast it for 5-7 minutes on low heat till the cheese has melted.

Garnish:

Finally, sprinkle some oregano and red chili flakes as the finishing touch.

Your chilli cheese toast is ready to be served hot.

Chilli Cheese Toast Recipe in Air Fryer

In order to make this toast in an air fryer, pre-heat the air fryer according to the manufacturer’s instructions, and place the prepared bread in it for 4-6 mins at 180° C.

You don’t need to oil spray the air fryer as the bread might lose its crispiness.

Tips & Variations

Add more veggies: I wanted to keep this recipe super simple with minimal ingredients but to add more texture and make it into a wholesome treat, try adding in sweet corn, and bell peppers.

Apply some butter at the bottom: If by mistake the pan gets too hot, the bread might get stuck and possibly burn from below. Spread some butter on the bottom of the bread, or drizzle half a teaspoon on the pan to avoid burning.

Cook the bread beforehand: Toast the bread in advance with butter before adding the mixture. This way when you again place the bread in the pan, it’ll maintain its shape and will need less cooking time, thus the bread may not succumb to burning.

How to Store

I would suggest not storing this toast and eating it fresh to keep its flavor and crispy texture intact.

Storing it will make the bread soggy and alter its flavor profile.
